Chicken Tortilla Soup
I have miraculously avoided my annual spring sinus infection thus far. That’s only happened once in the past 15 years! A little chicken soup at this time of year can’t hurt when my body is struggling valiantly with allergies. I haven’t made chicken tortilla soup in awhile and I don’t seem to have written down the recipe anywhere so it’s time to remedy that.
Chicken Tortilla Soup
1 large sweet onion, chopped
4 ribs celery, chopped
4 carrots, peeled and chopped
4 cloves garlic, minced
1 whole chicken
2 jalapenos, finely chopped
a few bay leaves
1 bunch cilantro, rinsed and chopped, reserve ¼ cup
2 tablespoons ground ancho chili powder
2 tablespoons ground cumin
salt and cayenne pepper, to taste
4 cups chicken broth (extra water if needed to almost cover chicken)
1 28oz can fire-roasted crushed tomatoes
6 ounces tomato paste
In a large pan, brown chicken on all side. Add onion, celery, carrots, garlic and jalapeno and cook until vegetables are softened. Add remaining ingredients, reserving ¼ cup cilantro, and bring to a simmer. Cook at a simmer, covered, for 30 minutes, turning the chicken after 15 minutes. Turn off heat and let stand 60 minutes. Remove chicken front the pot, return broth to a light simmer, and shred the meat back into the pot. Remove from heat, sprinkle over reserved cilantro. Serve with a squeeze of lime, some sliced avocado and tortilla chips.

Calling All Test Knittes
I am in need of 2 to 3 test knitters. I am developing a shawl pattern specifically for my worsted weight merino yarn (pteranondon–it’s a 4-ply.) It’s a large, simple shawl knit on size us 11 needles and uses just under two skeins of my pteranodon worsted yarn.
I hope to have the pattern ready within the next week. The only compensation I can offer is the two skeins of yarn it takes to make the shawl. These two skeins will be in color of test knitter’s choice. And at the end, you get a big, warm shawl that suits you. (I’ll even dye to suit if you don’t see something you like in the shop!)
What I need from you:
a link to two projects that show you are experienced with simple lace patterns.
an ability to knit and photograph your pattern within two to three weeks of receiving your yarn. (I promise, it is a quick knit!)

Ham bone
I always look forward to ham and white bean soup after Easter. This year’s ham was naturally raised instead of the spiral cut commercial ham we usually get. It was really delicious!
Ham, white bean and escarole soup
Add 1 pound dried white beans, a few bay leaves, and water to cover by about 3 inches to a large pot. Bring to a boil for 5 minutes then turn off and let sit at least an hour, covered. Bring back to a simmer and cook 30 minutes, add a ham bone and cook until beans are soft, about another 30 minutes or more depending on how fresh your dried beans are. Remove the ham bone and bay leaves. Pick off any meat from the bone, returning it to the pot. Add one head of escarole, washed and chopped, to the pot and simmer, covered, a few minutes until wilted. Taste and add seasonings if needed.
